Light Double Chocolate Muffins Makes 12. Per muffin: 2.4g fat, 696kJ.
90g Pitted prunes 125ml (1/2 cup) warm water 150g (2/3 cup) caster sugar
180ml (3/4 cup) skim milk 1 Egg 1 Egg white 225g (1.1/2 cups) self-raising flour
25g (1/4 cup) Nestlé Baking Cocoa 60g (1/3 cup) Nestlé Choc Bits
Spray an 80ml (1/3 cup) muffin pan with cooking oil spray or line with paper muffin cases. Combine prunes and the water in a
blender, blend intil smooth. Add sugar, blend until smooth. Add milk, egg and egg white, beat until just combined. Pour into a bowl. Fold in sifted flour and Nestlé baking cocoa, then fold in
Nestlé Choc Bits. Spoon mixture into muffin cases, bake in moderate oven for 20 minutes or until firm to touch. Turn onto wire rack to cool.
A normal muffin usually contains between 20-30g fat/each
